Ready to spice up your dinner routine? Meet Halloumi Fajitas—the ultimate mash-up of squeaky cheese goodness and sizzling Tex-Mex flair! These veggie-packed, flavour-loaded fajitas are all about golden, crispy halloumi tossed with vibrant peppers, zesty spices, and wrapped in warm tortillas.
Method
Based on 4 servings, adjust as needed.
Step 1
Cut the halloumi into strips and prepare all of the veggies as per the ingredients list. Heat the oil in a large non-stick frying pan over a medium heat and fry the halloumi on both sides until golden, 5-6 mins. Remove the halloumi from the pan, leaving the oil behind, and set aside.
Step 2
Fry the onions in the oil for 6-8 mins, over a medium-low heat, until soft and just starting to brown. Add the mushrooms, increase the heat and fry for 3-4 mins until beginning to turn golden. Add the peppers and fajita seasoning, and cook for 3 mins. Add a splash of water if needed. – you want them to still have some bite. Add the fried halloumi back int the pan to heat through, but don't break it up. Add the lime juice.
Step 3
Warm the tortilla wraps in a frying pan over a medium heat or in the microwave. Pile the cooked vegetables and halloumi onto the wraps, adding a dollop of soured cream, a scattering of picked coriander leaves and a few slices or avocado. For some extra heat, add a few jalapeños to your wrap.
