A great way to get the family cooking and eating together whilst using up some items from the fridge. It's simple, fun, tasty and most importantly, it is budget friendly.
Method
Based on 4 servings, adjust as needed.
Step 1
Make the pizza sauce by mixing the tomato puree with about 2 tbsp water, (if cooking for 4), and the remaining dried mixed herbs. Gather toppings from the fridge: small bits of pepper, a bit of diced onion, leftover ham, diced chorizo, cooked chicken, frozen corn. You can also add extra bits to your salad that need using up: grated carrot, a small bit of cucumber.
Step 2
Preheat the oven to 200°C. Chop the potatoes into wedges and cook in a pan of cold water on medium-high heat for 10-12 minutes. Drain and steam for 1-2 minutes with the lid on.
Step 3
Mix half of the olive oil, with most of the **mixed herbs and the garlic granules a little salt and pepper. Drizzle over the wedges, toss, and place on a baking tray. Bake for 30 -35 minutes, turning halfway.
Step 4
Assemble pizzas on pita bread with sauce, toppings, and cheese. Bake for the last 10-12 minutes of the wedges' cooking time. Serve in the centre of the table, sharing style, along with a selection of condiments and a side salad. Enjoy!
