Crispy Feta Fried Eggs

Bish, bash, bosh your brunch with these crispy feta eggs. Spice them up with harissa, or chilli oil or make them more family-friendly by using pesto. Customise away!

Method

Based on 4 servings, adjust as needed.

Step 1

๐Ÿ‘‹ Recipe method is for 1 - adjust accordingly. Heat a small, non-stick frying pan and add 1 tsp of oil. Once hot, add the feta cheese in a circular pattern leaving a gap in the centre (for the egg). Leave the feta to bubble and melt for about a minute before adding 1 tsp harissa paste to the centre. Allow the harissa to cook for 10 seconds before cracking in an egg.

Step 2

While the egg is cooking, heat a tortilla over an open flame, in a dry frying pan, in a toaster or just pop them into the microwave if easier.

Step 3

Remove the crispy egg from the pan once it is super crispy around the edges and the egg is cooked to your liking. Top the warmed tortilla with egg, scatter with a little picked dill and tuck in. Best eaten folded in half, with your hands. Repeat as required.

  • 4 Eggs 1 x Sainsbury's British Free Range Eggs Medium x6
  • 1 tsp dill, picked 1 x Sainsbury's Bunched Dill 20g
  • 4 tsp Olive Oil 1 x Sainsbury's Olive Oil 500ml
  • 150g Feta 1 x Sainsbury's Greek Feta Cheese 200g
