Chicken Pasta Bake

Enjoy this gooey cheese and chicken pasta bake for the ultimate weekday family dinner. Serve straight from the dish with a dressed green salad.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat half of the oil in a pan over a medium heat and fry the onion gently for 10-12 mins. Add the garlic and chilli flakes (if using) and cook for 1 min. Tip in the tomato passata and sugar and season to taste. Simmer uncovered for 20 mins or until thickened, then stir through the mascarpone.

Step 2

Heat a little more oil in a non-stick frying pan. Season the chicken and fry for 5-7 mins or until the chicken is cooked through.

Step 3

Heat the oven to 220C/200C fan/gas 7. Cook the penne following pack instructions. Drain and toss with the remaining oil. Tip the pasta into a medium sized ovenproof dish. Stir in the chicken and pour over the sauce. Top with the cheddar, mozzarella and parsley. Bake for 20 mins or until golden brown and bubbling.

  • 2 Garlic Cloves, crushed 1 x Sainsbury's Garlic
  • 600ml Tomato Passata, or pasata 1 x Napolina Tomato Passata 690g
  • 15g Parsley, finely chopped 1 x Sainsbury's Fresh Packed Flat Leaf Parsley 30g
  • 50g Mozzarella, grated 1 x Sainsbury's Grated Mozzarella Cheese 250g
  • 4tbsp Olive Oil 1 x Sainsbury's Olive Oil 1L
  • 4 Skinless Chicken Breasts, or thigh, sliced into strips 1 x Sainsbury's 1kg British Fresh Skinless & Boneless Chicken Breast Fillets
  • 1tsp Caster Sugar 1 x Sainsbury's White Caster Sugar 1kg
  • 3tbsp Mascarpone 1 x Sainsbury's Mascarpone Cheese 250g
  • 400g Penne, or any short pasta 1 x Sainsbury's Penne Rigate Pasta 500g
  • 0.25tsp Chilli Flakes 1 x Sainsbury's Chipotle Chilli Flakes 45g
  • 90g Green Salad 1 x Sainsbury's Bistro Salad 150g
