Blackened Shrimp Hot Dogs

Try this exotic twist on the hot dog with king prawns, black beans, mango and hot jalapeño mayonnaise. A fun family style meal that you can all dig into.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oven or air fryer and cook the sweet potato fries according to the packet instructions, if using.

Step 2

Mix the (defrosted) prawns with the fajita seasoning and the oil, set aside.

Step 3

Heat a large frying pan and once hot, cook the prawns to just pink, remove from pan, set aside.

Step 4

Mix the black beans with the half of the lime juice, half the coriander, the diced mango and a good pinch of seasoning. These beans can be served warm or at room temp. In a separate bowl, stir the chopped jalapeños into the mayo.

Step 5

Split the buns in half, fill each with a quarter of the beans. Top with the prawns, drizzle over the mayo, scatter over the remaining coriander and serve with the lime wedges and the sweet potato fries.

  • 400g Raw King Prawns 2 x Sainsbury's Raw King Prawns ASC 165g
  • 15g Coriander, leaves, roughly chopped 1 x Sainsbury's Fresh Packed Bunch Coriander 30g
  • 2tbsp Oil 1 x Sainsbury's Olive Oil 500ml
  • 80g Mango, peeled and chopped 1 x Sainsbury's Mango Single
  • 240g Spiced Black Beans 1 x Merchant Gourmet Smoky Black Turtle Beans 240g
  • 600g Sweet Potato Fries 1 x Sainsbury's Sweet Potato Fries 500g
  • 2 tbsp Fajita Seasoning 1 x Old El Paso Mexican Smoky BBQ Fajitas Seasoning Mix 35g
  • 4 Brioche Hot Dog Buns, or regular buns 1 x Sainsbury's Brioche Hot Dog Rolls x6
