Black Bean, Avocado and Mango Salad with Chilli Prawns

This vibrant salad is a firm favourite to serve at any BBQ spread. Fresh, zingy, ready in minutes. You can keep it totally vegan, or add some pre-cooked chilli prawns or grilled halloumi.

Method

Based on 4 servings, adjust as needed.

Step 1

Put diced red onion, chopped coriander, chopped chilli, lime juice and zest into a mixing bowl and mix to combine.

Step 2

Gently fold in the sliced avocado, sliced mango, drained and rinsed black beans and peanuts, being careful not to break up the pieces as you go. Add the olive oil and season to taste.

Step 3

Serve the salad as a side for a BBQ spread, a light lunch or quick dinner either with some juicy chilli prawns, grilled halloumi or with some basmati rice for a heartier affair.

  • 2 Avocados, de-stoned, peeled and sliced into strips 1 x Sainsbury’s Medium Ripe & Ready Avocados x2
  • 1 Lime, juice and zest 1 x Sainsbury's Limes x1
  • 1 tbsp Olive Oil 1 x Sainsbury's Olive Oil 500ml
  • 150g Pre Cooked Chilli Prawns 1 x Sainsbury's Chilli & Coriander King Prawns ASC 150g
  • 1 jar Queen Black Beans, drained and rinsed 1 x Bold Bean Co Queen Black Beans 570g
  • 3 tbsp Roasted Peanuts, roughly chopped (optional) 1 x Sainsbury's Dry Roasted Peanuts 550g
  • 15g Coriander, roughly chopped 1 x Sainsbury's Fresh Packed Bunch Coriander 30g
  • 1 Red Chilli, finely chopped 1 x Sainsbury's Red Chillies 65g
  • 1 Red Onion, finely chopped 1 x Sainsbury's Red Onions Loose
