This salmon bang bang bowl is a balanced, nutrient-rich meal packed with lean protein from salmon and edamame, heart-healthy fats from sesame and seeds, and plenty of fibre and vitamins from fresh vegetables. With around 30g of protein and 5g of fibre per serving, it’s a satisfying dish that supports muscle health, digestion, and sustained energy.
Method
Based on 4 servings, adjust as needed.
Step 1
Preheat the oven to 200°C (180°C fan/400°F/Gas 6) and line a baking tray with baking paper. If using an air-fryer, preheat instead.
Step 2
Put the diced salmon pieces into a bowl and toss with the sesame oil, BBQ seasoning and garlic granules. Transfer to the prepared baking tray and bake in the oven for 10 minutes. Alternatively, cook in a lined air fryer at 180°C for 8 minutes.
Step 3
Whisk together the light mayo, sweet chilli sauce and sriracha to make the bang bang sauce. Add a little water to loosen. If making these for meal prep, transfer the sauce to little sauce pots and store in the fridge.
Step 4
Heat the sticky rice according to the packet instructions. Add the rice and the cooked salmon bites to bowls (or to airtight containers to prepare ahead) and add the edamame, carrots, radishes and salad. Garnish with sesame seeds. Serve with the sauce. This will keep in the fridge for up to 4 days
