Banana Overnight Oats

Rustle up these easy overnight oats made with bananas, nut butter and almonds for a tasty breakfast. Prepped the night before, they're ideal for busy mornings.

Method

Based on 2 servings, adjust as needed.

Step 1

Mash 1 banana (if making two portions) in a bowl with a fork until smooth. Stir in the oats, cinnamon, maple syrup, milk and peanut butter. Mix well, then cover and chill overnight.

Step 2

The next morning, stir the soaked oats, adding another splash of milk if the mixture is quite stiff. Divide between bowls. Slice the remaining banana and scatter this over the oats, drizzle with more nut butter and sprinkle over the almonds. Top with spoonfuls of yoghurt, if using, and sprinkle with a pinch more cinnamon before serving.

  • 0.25tsp Ground Cinnamon, plus a pinch to serve 1 x Sainsbury's Ground Cinnamon 38g
  • 2tbsp Flaked Or Chopped Almonds 1 x Sainsbury's Flaked Almonds, SO Organic 100g
  • 2 tbsp Dairy Free Yoghurt, of your choice, to serve 1 x Alpro Greek Style Plain Dairy Free Yoghurt Alternative 400g
  • 1tbsp Maple Syrup 1 x Clarks Original Maple Syrup with Carob Syrup 180ml
  • 2tbsp Peanut, or almond butter, plus extra to serve 1 x Sainsbury's Smooth Peanut Butter 340g
  • 300ml Nut Milk, of your choice, plus a splash 1 x Sainsbury's Unsweetened Long Life Almond Drink 1L
  • 2 Ripe Bananas, peeled 2 x Sainsbury's Fairtrade Bananas Loose
