Indulge in a flavour-packed journey with these spicy chicken wings which are perfectly complemented by a zesty cucumber avocado salad. Method
Based on 4 servings, adjust as needed.
Step 1
Preheat the oven to 200°C (fan-assisted) and line a large baking tray with baking paper.
Step 2
Place the chicken wings in a large bowl. Scatter over the chilli powder, cayenne pepper, paprika and garlic granules. Season with salt and pepper. Get stuck in with clean hands and massage the spice mix into the wings. Lay the chicken wings out on the prepared baking tray and place the tray in the oven for 25 minutes.
Step 3
While the wings cook, finely chop the green chili, mint, coriander, green olives, tomatoes and avocado, place in a bowl. Trim the cucumber and remove the seedy, watery core. Finely chop the remaining flesh into small pieces and add to the salad. Add the olive oil and season with salt and pepper. Toss well to combine. Cut the lemon into wedges.
Step 4
Serve the wings with the salad and season with additional salt and pepper, if needed. Garnish with additional chopped coriander, and lemon wedges to squeeze over the whole lot.
