Amalfi Chicken Orzo

A simple pasta dish with a creamy and delicious sauce. Orzo are tiny pasta pearls that give a risotto-type dish.

Method

Based on 4 servings, adjust as needed.

Step 1

Cook the orzo in boiling salted water until just tender according to the packet instructions. Drain and set aside.

Step 2

Season the chicken well with salt and freshly ground black pepper and toss in the runny honey. Heat the oil in a deep frying pan with a lid over a high heat. Add the chicken and fry for a few minutes, turning occasionally, until golden brown and just cooked. Remove the chicken from the pan and set aside.

Step 3

Melt the butter in the same unwashed pan. Add the onion and fry over a medium heat for a few minutes, stirring occasionally, then cover and cook for 10 minutes until soft.

Step 4

Remove the lid, add the mushrooms and fry until the liquid has evaporated from the mushrooms. Pour in the wine and reduce slightly. Add the garlic, spinach and sour cream and bring to the boil.

Step 5

Finally add the cooked orzo, cooked chicken, Parmesan and lemon juice to the pan. Check the seasoning and toss together until hot through.

Step 6

Serve in bowls with a green salad.

  • 250g Chestnut Mushrooms, sliced 1 x Sainsbury's 300g Closed Cup Chestnut Mushrooms
  • 1 Onion, finely chopped 1 x Sainsbury's Onions Loose
  • 2tbsp Olive Oil 1 x Sainsbury’s Sunflower & Extra Virgin Olive Oil 500ml
  • 80g Green Salad 1 x Sainsbury's Butterhead Salad 90g
  • 1 knob of Butter 1 x Sainsbury's British Butter, Unsalted 250g
  • 150ml White Wine 1 x Sainsbury's House Pinot Grigio White Wine (Small bottle) 18.7cl
  • 2 Garlic Clove, finely grated 1 x Sainsbury's Garlic
  • 55g Parmesan, finely grated 1 x Sainsbury's Parmigiano Reggiano Cheese 200g
  • 150g Sour Cream 1 x Sainsbury's Soured Cream 300ml
  • 1tbsp Fresh Lemon Juice 1 x Sainsbury's Lemons
  • 150g Baby Spinach 1 x Sainsbury's Baby Leaf Spinach 200g
  • 2 Chicken Breasts, skin removed and sliced into thin strips 1 x Sainsbury's 320g British Fresh Skinless & Boneless Chicken Breast Fillets
