Air Fryer Tuna Mayo Jacket Potatoes

This recipe will show you how to bake a potato in an air fryer to achieve a deliciously crispy skin and a fluffy centre. Load it with any filling of your choosing. Leftover chickpea stews, chilli con carne or the classic, tuna mayo.

Method

Based on 2 servings, adjust as needed.

Step 1

Start by washing the potatoes to remove any dirt and impurities. Then, pat dry with kitchen paper or a towel. Begin pricking the potatoes with a fork. We recommend pricking about 4 times around each potato. Transfer the potatoes to a plate or bowl, rubbing with olive oil and a generous sprinkle of Maldon sea salt flakes. Set aside.

Step 2

Spray the air fryer basket with cooking spray or cooking oil to create a non-stick layer so that the potatoes will not stick together. Arrange the potatoes in a single layer in the air fryer basket. Set the air fryer to 200c and cook for 40 minutes until the potatoes are crispy on the outside and fluffy in the middles. Rotate the potatoes after 20 minutes to have an even bake on each side. The baked potatoes should be done when a sharp knife can go through them easily.

Step 3

When baked, the skin on the jacket potatoes should be perfectly crisp and the inside tender and fluffy as you cut through the centre.

Step 4

Drain the tuna and add to a bowl. Mix with the mayonnaise, a pinch of Maldon sea salt flakes, black pepper, chopped chives (if using) and spring onions.

Step 5

Open the jacket potatoes and melt some butter on first. Spoon in the tuna mayonnaise, and top with grated cheddar. Sprinkle with a final few chives.

  • 2 Jacket Potatoes, Maris Pipers or King Edwards 2 x Sainsbury's Baking Potatoes Loose
  • 1 tbsp Olive Oil 1 x Sainsbury's Olive Oil 500ml
  • 2tbsp Mayonnaise 1 x Sainsbury's Mayonnaise Squeezy 500ml
  • 1 tsp Maldon Salt 1 x Maldon Sea Salt Flakes 250g
  • 50g Mature Cheddar, grated 1 x Sainsbury's British Mature Cheddar Cheese 400g
  • 45g Salad Leaves, to serve 1 x Sainsbury's Baby Leaf Salad 90g
