Get inspired by fresh Mediterranean flavours in this easy chicken bowl. The recipe is adaptable – feta and olives would be welcome additions too.
Method
Based on 4 servings, adjust as needed.
Step 1
Put the chicken thighs **in a large bowl with the **yoghurt, dried mint, grated garlic, half of the turmeric, half of the olive oil and half of the ground coriander. Season well with salt and pepper, then mix thoroughly with your hands.
Step 2
Put the sliced red onions in the bowl or basket of your air fryer, drizzle with a little more oil and sprinkle in the remaining turmeric, ground coriander and salt and pepper. Toss to combine. Lay the chicken on top, then air-fry at 190°C for 20-25 mins, turning the chicken halfway, until it’s cooked through.
Step 3
Meanwhile, cook the couscous following pack instructions. Mix the cucumber, tomatoes and dill with the vinegar and some salt.
Step 4
Split the cooked chicken and onions between bowls. Mix the roasted onions with the couscous and a little more olive oil and some salt and pepper. Add the couscous salad to the chicken. Serve with a dollop of yoghurt and a drizzle more olive oil, if you like.
