Air Fryer Harissa Sausage and Veg Traybake

Make this sausage and veg traybake in the air fryer for a budget-friendly dinner. It only take 15 minutes of prep so makes a perfect midweek meal. Swap out the sausages with salmon, haloumi or meatballs to change the recipe up a little.

Method

Based on 2 servings, adjust as needed.

Step 1

Heat the air fryer to 200C. Tip the squash into a bowl and toss with a little oil and a good pinch of salt and pepper. Tip into the air fryer basket and cook for 10 mins.

Step 2

Drizzle the remaining oil into the bowl you used previously and toss in the red peppers, onions and garlic. Tip into the air fryer basket and give everything a shake before cooking for a further 15 mins.

Step 3

Put the sausages, harissa and lemon juice into the bowl and mix together. Add this to the air fryer basket, toss everything together and cook for 15 mins. Mix in the leaves and cook for another 5 mins. Serve with natural yoghurt, if you like.

  • 1.5 tbsp Olive Oil 1 x Sainsbury's Olive Oil 500ml
  • 1 Lemon, juiced 1 x Sainsbury's Lemons
  • 4 Sausages 1 x Heck 97% Pork Gluten Free Sausages x6 400g
  • 2 tbsp Harissa, to taste 1 x Sainsbury's Harissa Paste, Inspired to Cook 90g
  • 100 g Dark Green Leaves, such as kale or cavolo nero, roughly sliced 1 x Sainsbury's Kale 200g
  • 400g Butternut Squash, roughly chopped or sliced 1 x Sainsbury's Butternut Squash Slices, Inspired to Cook 400g
  • 1 Red Pepper, roughly chopped 1 x Sainsbury's Red Pepper
  • 4 Garlic Cloves, lightly bashed 1 x Sainsbury's Garlic
