15 Minute Spicy Peanut Butter Dumplings

If you’ve only got 15 minutes to make dinner, save this deliciously easy dumpling recipe. It’s all made in one pan so there’s minimal washing up and you only need a handful of ingredients.

Method

Based on 2 servings, adjust as needed.

Step 1

Heat a medium-sized saucepan on medium heat and add in the vegetable oil, minced garlic, red Thai curry paste, soy sauce, and peanut butter. Stir and fry for 30 secs, then stir in the coconut milk and chicken stock.

Step 2

Stir until smooth and bring to the boil. Then reduce to simmer.

Step 3

Taste for seasoning. Then add in the frozen dumplings and cook according to packet instructions, about 4-6 mins.

Step 4

Once your dumplings are cooked, divide between bowls and garnish with freshly chopped coriander, lime wedges and chilli oil.

  • 1tbsp Red Thai Curry Paste 1 x Blue Dragon Thai Red Curry Paste Pot 50g
  • 400ml Coconut Milk 1 x KTC Coconut Milk 400ml
  • 200ml Chicken Broth, or chicken stock 1 x itsu Brilliant' Broth Chicken Ramen 500ml
  • 270g Chinese Or Japanese Style Frozen Dumplings, veggie, pork or chicken 1 x itsu Vegetable Fusion Gyoza Dinner Dumplings x20 270g
  • 10g Coriander, finely chopped 1 x Sainsbury's Fresh Packed Bunch Coriander 30g
  • 1tsp Chilli Oil, or to taste 1 x itsu Crispy Chilli Oil 100g
  • 1tbsp Light Soy Sauce 1 x Sainsbury's Light Soy Sauce 150ml
  • 2tbsp Peanut Butter 1 x Sainsbury's Peanut Butter Smooth 340g
