Place a large saucepan of water on the hob, cook the peas for a few minutes until tender. Once the peas are cooked drain into a large sieve. Return the now empty saucepan to the hob and add the olive oil.
Once the oil is hot add the Inspired to Cook diced onions and some salt and pepper and cook slowly until very soft and translucent. Meanwhile tip 2/3 of the cooked peas into a food processor along with most of the mint, all the parmesan and a glug of water. Blitz to form a thick puree and set aside.
Once the onion is cooked through add the crushed garlic and cook out for a few minutes. Now add the risotto rice, stir to coat, and add a ladleful of stock. Cook the stock out, stirring often, and add another ladleful. Continue adding and reducing the stock, then once the risotto is almost cooked through add in the pea puree and remaining whole peas.
Reduce the heat to low/medium and stir the puree through. Continue cooking gently until the rice is cooked completely, then turn the heat off and leave to rest for 5 minutes before portioning between 4 bowls.
Finish with the remaining mint leaves and a little extra black pepper
