Naked Vegan Burrito Bowl

Mix together onions, peppers, and black beans with some Mexican spicy rice for the perfect naked vegan burrito. Method

Based on 4 servings, adjust as needed.

Step 1

Heat the vegetable oil in a pan and add the sliced onions and sliced pepper. Sweat for 5 to 10 minutes or until soft and starting to caramelise. Stir through the chipotle paste and drained black beans. Cook for a further couple of minutes.​

Step 2

Heat the rice in the microwave according to pack instructions.​

Step 3

Arrange the rice onto a serving dish and top with the bean chipotle pepper mix. Use the tortilla chips to dig in!​
