Based on 4 servings, adjust as needed.
Start by making the dough according to the pack instructions. To do this simply tip the pizza mix into a bowl along with 340ml water (if cooking for 4) and mix briefly with a wooden spoon before bringing together with your hands. Tip out onto a clean worktop and knead for 10 minutes, then place in an oiled bowl. Cover with a damp tea towel and leave to prove for 1.5 hours.
When your dough is ready and has doubled in size tip out onto a clean worktop and split in half. Shape into rounds about 1.5cm thick. Turn the grill on to high.
Heat some oil in a large pan (to fit your pizza base- around 9-10 inches) and add the first pizza base carefully, stretching the sides out if they fold in. Spread a couple of spoonfuls of passata over the base, then some mozzarella (torn or sliced). Finish with some of the roasted vegetables.
After about 5 minutes the base of the pizza will be crisp. Transfer to under the grill and cook for about 5 more minutes, until the crust is crisp and darkened in places and the cheese starts to caramelise.
Remove the pizza from the pan and repeat with the other base(s) and remaining ingredients.
