Place a large saucepan over a medium heat and add the vegetable oil. Add the massaman curry paste and cook for a few minutes in the hot oil. Add the coconut milk and stir into the curry paste. Bring to a simmer.
Meanwhile, rinse the rice in a sieve with cold water and place into a separate saucepan. Fill with water so that the water comes to 1cm above the rice. Cover with a lid and place on the hob, allowing it to gently come to a simmer. The rice should be cooked once all the water has been absorbed.
Drain the chickpeas and add them to the curry. Top and tail the green beans and chop them in half. Add the green beans to the curry and simmer for a further 3 minutes.
Serve the curry into bowls with a large spoonful of rice.
