Based on 4 servings, adjust as needed.
Place the sourdough pizza mix in a bowl along with 340ml of water. Mix briefly to bring together then tip out onto a clean surface and knead for 10 adding a little flour if it sticks. Once the dough is smooth and elastic place in a bowl (oiled with 1tbsp oil) and cover with a damp tea towel or cling film. Leave to prove for 1.5 hours at room temperature.
Once the dough has doubled in size split into two equal pieces and stretch out into 12-inch circles. Heat the grill to high.
Add 1 tbsp oil to a 12-inch frying pan and carefully place one of the bases in, stretching out to the edges if needed. Spread 3 tbsp of passata over the base, then add half of the ham, mozzarella, chilli and pineapple. Cook for 4-5 minutes or until the base is crisp and golden, then transfer to the grill and cook until the cheese has melted and the crust is golden brown and cooked through.
Remove the pizza from the pan and add the remaining tbsp of oil and the next pizza base. Repeat the process.
