Smoky Pulled Aubergine and Black Bean-Loaded Fries with Green Goddess Sauce

Aubergine is a brilliant carrier of flavour. It absorbs spice and seasoning like a delicious little meaty sponge. And let's face it, everything tastes good when loaded ontop of homemade chips.

Method

Based on 2 servings, adjust as needed.

Step 1

Preheat the oven to 220°C/200°C fan/gas mark 7.

Step 2

Halve the aubergine lengthways and score the flesh in a criss-cross pattern about 1cm deep. Place on a baking tray with a drizzle of vegetable oil and roast for 25-30 minutes, until soft and melty.

Step 3

Meanwhile, chop the potatoes into 1cm-thick fries and toss on a second baking tray with a drizzle of vegetable oil and a pinch of salt. Roast for 20–25 minutes until golden.

Step 4

Finely dice the red onion and crush the garlic clove. Heat a drizzle of vegetable oil in a deep-sided pan over a medium–high heat. Add the onion and fry for 3–4 minutes until soft, then add half of the crushed garlic, tomato purée, ancho chilli flakes and oregano. Fry for 1–2 minutes more, then drain and rinse the black beans and add to the pan. Crumble in the stock cube and pour over 200ml boiling water (if cooking for 2). Bring to the boil, then reduce the heat and leave to simmer for 15 minutes.

Step 5

Once the aubergine is ready, remove from the oven and remove and discard the skin. Pull apart the flesh and add this to the black bean mix. Roughly chop the cherry tomatoes and add to the pan. Stir and leave to simmer while you wait for the fries to finish cooking.

Step 6

Peel and stone the avocado and peel the remaining garlic clove. Add to a blender with two-thirds of the coriander and a little water. Squeeze in the lime juice and blend until smooth and the consistency of double cream. Chop the remaining coriander.

Step 7

Serve the fries covered in the pulled aubergine mix, topped with the avocado sauce. Finish with the remaining coriander.

  • 1 tbsp Tomato Purée 1x Sainsbury's Tomato Puree, Double Concentrate 200g
  • 2 tsp Ancho Chilli Flakes, or smoked paprika 1x Sainsbury's Ancho Chilli Flakes 27g
  • 1 Tin Black Beans, drained 1x Sainsbury's Black Beans in Water 400g (235g*)
  • 10g Coriander 1x Sainsbury's Fresh Packed Bunch Coriander 30g
  • 150g Cherry Tomatoes, cut in half 1x Sainsbury's Cherry Tomatoes 300g
  • 1 Avocado, peeled and destoned 1x By Sainsbury’s Medium Ripe & Ready Avocado
  • 1 Lime 1x Sainsbury's Limes
  • 1 tsp Dried Oregano 1x Sainsbury's Oregano 12g
  • 1 Aubergine, cut in half lengthways 1x Sainsbury's Aubergine
  • 3 Potatoes, cut into chunky fries or wedges, skin left on if you like 3x Sainsbury's Baking Potatoes Loose
  • 1 Red Onion, diced 1x Sainsbury's Red Onions Loose
