This zesty, one-bowl WFH wonder pairs juicy prawns, salty feta and orzo for a bright, protein-packed lunch that’s sophisticated enough to feel like a break but simple enough to toss together between meetings.
Method
Based on 4 servings, adjust as needed.
Step 1
Cook the orzo in a pan of boiling salted water for 8-10 mins until tender. Drain, then rinse under cold running water to cool. Drain again.
Step 2
Tip the orzo into a bowl with the oil, lemon juice, zest and dill. Fold in the sliced spring onions, chopped cucumber, sliced sun-dried tomatoes, crumbled feta, and the cooked prawns. Gently tossing everything together.
Step 3
Transfer to a serving bowl, or if you want to eat later, pack into an airtight container, then toss through the rocket just before you’re ready to serve. Add a pinch of chilli flakes and a drizzle of balsamic glaze if you like.
