Welsh Rarebit (Cheese on Toast)

Cheese on toast has NEVER tasted better.

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the grill to medium-high.

Step 2

Mix the grated cheese, beaten egg, Worcestershire sauce, mustard and ale in a mixing bowl.

Step 3

Toast the bread on both sides under the grill.

Step 4

Spread the cheese mixture on top of the toast, making sure to cover all corners, and return to your grill. Grill until the cheese has melted and is starting to turn golden.

Step 5

If you are serving your Welsh Rarebit with the optional salad, lightly dress the lambs lettuce with the lemon juice, olive oil and a sprinkling of salt. Serve immediately with your bubbling, cheesy toast and a dash more Worcestershire sauce for good measure.

  • 2 tbsp Ale 1x Hobgoblin Ruby Ale Beer Bottle 500ml
  • 2 tsp Worcestershire Sauce 1x Lea & Perrins Worcester Sauce 150ml
  • 350g Mature Cheddar Cheese, grated 1x Sainsbury's British Mature Cheddar Cheese 400g
  • 1.5 tsp Mustard 1x Sainsbury's English Mustard 185g
  • 0.5 Lemon, juiced 1x Sainsbury's Lemons
  • 8 Slices Sourdough Bread 1x Sainsbury's Sourdough Medium Sliced White Bread, Taste the Difference 400g
  • 1 Egg, beaten 1x Sainsbury's British Free Range Eggs Medium x6
  • 60g Lambs Lettuce, or babyleaf salad 1x Sainsbury's Lambs Lettuce 60g
