Speedy Turkey Wraps With Pickled Red Cabbage

Make these speedy wraps from just a few store cupboard condiments and spices for a quick and easy lunch or dinner. Let every customer customise as they wish with pickled cabbage, chillies or tzatziki.

Method

Based on 4 servings, adjust as needed.

Step 1

In a large bowl, mix together the turkey thigh mince, crushed garlic cloves, harissa paste, cumin, sumac, half of the chopped parsley, a generous pinch of salt and a good crack of black pepper. Use your hands to combine everything well.

Step 2

Heat the oven to 200C/180C fan/gas 6. Lay the flatbreads out on a large baking tray after sprinkling the underside with a little water, then flip. Divide the turkey mixture between them evenly. Spread out to the edges, then drizzle with the oil. Bake for 10-12 mins until brown and cooked through. You could also use the air fryer for this.

Step 3

Sprinkle the remaining parsley over the flatbreads, then roll up and cut in half. Serve with the pickled cabbage, tzatziki and pickled chillies (if using) on the side to fill the wraps.

  • 200g Pickled Red Cabbage 1 x Sainsbury's Pickled Red Cabbage in Vinegar 440g (190g*)
  • 500g Turkey Mince 1 x Sainsbury's 2% Fat Fresh British Turkey Mince 500g
  • 4 Flatbreads, we used Greek ones 1 x Deli Kitchen Greek Style Flatbread x4 320g
  • 2 Garlic Cloves, grated 1 x Sainsbury's Large Garlic
  • 2 tsp Ground Cumin 1 x Sainsbury's Ground Cumin 43g
  • 2 tsp Sumac 1 x Village Sumac 100g
  • 1 tbsp Harissa Paste 1 x Al'Fez Middle Eastern Harissa Paste 180g
  • 4 tbsp Tzatziki 1 x Odysea Tzatziki Dip 200g
  • 4 Pickled Chillies, drained 1 x Aleyna Pickled Chilli Peppers 440g (170g*)
