Sausage and Sizzled Sprout Noodles

Forget everything you think you know about sprouts. Once sizzled in oil, they become crispy and unlike any boiled sprout your grandmother used to force you to eat on Christmas day. Inspired by the flavours of Dan Dan noodles, we love the salty addition of sausage meat in contrast with the creamy tahini and fiery chilli oil. This recipe is cheap and speedy, making it ideal for those weeknight recipe slumps.

Method

Based on 4 servings, adjust as needed.

Step 1

Begin by slicing the sprouts. Trim off the ends then cut them in half. Place the sprout cut-side down on your chopping board and finely slice. Alternatively, use a mandolin or the slicing attachment of your food processor if you have one. Finely slice the spring onions too and remove the sausages from their skins as best you can.

Step 2

Set a large frying pan over a medium heat and add the oil. Once hot, tip in the sausage meat and break up with the back of a wooden spoon. Hard fry for 5-6 minutes until golden and crispy in places. Transfer the sausage to a plate and set aside.

Step 3

In the same pan, add the sliced spouts and spring onions and fry until ‘frazzled’ and crispy. This will take 4-5 minutes.

Step 4

In a small bowl, mix together the tahini, soy sauce and chilli oil. Cook the noodles in boiling water as per the instructions on the packet.

Step 5

Return the cooked sausage meat to the sprout pan along with the ginger and garlic paste and fry for a further minute.

Step 6

Once the noodles are cooked, use a pair of tongs to transfer them to the pan, allowing a little of their cooking water to come with them. Pour in the sauce and give everything a good toss. Add a little splash of water to loosen the sauce if you think it needs it. Divide the noodles onto plates, top with sesame seeds, if using, and dig in.

  • 2 tbsp Dark Soy Sauce 1x Sainsbury's Dark Soy Sauce 150ml
  • 1 tbsp Chilli Oil 1x Lee Kum Kee Chiu Chow Chilli Oil 170g
  • 1 tbsp Vegetable Oil, or sesame oil 1x Sainsbury's Vegetable Oil 1L
  • 225g Noodles 1x Sharwood's Medium Egg Noodles 226g
  • 2 tbsp Tahini 1x Al'Fez Middle Eastern Natural Tahini 160g
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
