Mushroom Yaki Udon

Yaki Udon is a quick and versatile noodle dish that allows you to get creative with the ingrediants you have. This version calls for mushrooms and pak choi but it would work just as well with peppers, broccoli, spring onions or mange tout. Get creative and jazz up your Yaki.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the sesame oil in a non-stick frying pan or wok over a high heat. Add the chopped garlic and fry for 15 seconds before adding the sliced mushrooms, pak choi and sliced spring onions*. Add a splash of water to create some steam and stir fry for 3-4 minutes.

Step 2

Add the udon noodles and teriyaki sauce. Cook for a further 3-4 minutes, stirring regularly. Divide between four bowls, garnish with sesame seeds and a pinch of chilli flakes on each (if using). Serve while steaming hot.

  • 600g Udon Noodles 2 x Sainsbury's Udon Noodles 300g
  • 175g Teriyaki sauce 1 x Sainsbury's Teriyaki Style Sauce 285g
  • 500g Mushrooms, sliced 1 x Sainsbury's Closed Cup White Mushrooms 500g
  • 200g Pak Choi, shreaded 1 x Sainsbury's Pak Choi 250g
  • 2 tbsp Sesame seeds 1 x Sainsbury's Sesame Seeds 50g
  • 2 cloves Garlic, crushed or finely chopped 1 x Sainsbury's Garlic
  • 1 tbsp Sesame oil 1 x Sainsbury's Sesame Oil, Toasted 250ml
  • 5 Spring Onions, cut into 3cm pieces 1 x Sainsbury's Spring Onions Bunch 100g
