A medley of colourful Mediterranean vegetables and feta roasted in a baking tray, then stirred into orzo to create a creamy sauce. Finished with lemon and basil. A simple and satisfying meal inspired by the recent 'tiktok feta pasta' trend.
Based on 4 servings, adjust as needed.
Preheat the oven to 200°C/180°C fan.
Chop the peppers, courgette and red onion into small chunks and halve the tomatoes. Add to a parchment lined baking tray and nestle the block of feta in the middle of the vegetables. Add the chopped garlic, drizzle with the olive oil, season with salt and the chilli flakes and bake in the oven for 25 minutes until the vegetables are soft and jammy and the feta is soft.
Boil the orzo in salted water as per the instructions on the packet. Drain once cooked, reserving a cup of the cooking water. Stir the orzo into the roasting tray along with the lemon juice, zest and some pasta water. The pasta water will help the feta and roasting juices coat the orzo. Add the torn basil if using.
Divide between plates and top with a drizzle of olive oil and more basil, if you like.
