Honey-Lemon Chicken, Rice and Beans

The simplest of simple dinners that we know you are going to love. This is a recipe straight from my family kitchen to yours (👋 I'm Sophie, head of food). My Mum would make this dish at least once a week, usually on a weeknight when she didn't have much time to spare. I can still remember the smell of the caramelised lemons and honey that would fill the kitchen and the fights over those gorgeous juices from the bottom of the roasting tray. This is a very humble recipe, close to my heart. I hope you enjoy eating as much as I do. 👩🏻‍🍳

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the oven to 195°C/175°C fan. Make up the marinade by combining the honey, wholegrain mustard, lemon juice and zest, grated garlic and most of the olive oil. Mix well.

Step 2

Place the chicken thighs into a deep baking tray (line this with parchment if you'd like to spare the washer upper from having to scrub caramelised honey from the tray) and pour over the marinade. Season with salt and pepper and toss the chicken in the marinade to make sure it's all well coated. Turn all the chicken skin side up and pop the tray into the hot oven to bake for 35-40 minutes, basting the chicken and its skin halfway through. (If the skin is over colouring, cover with foil for the last 10 minutes - but we love the crispy skin!)

Step 3

When the chicken is just about cooked, cook the green beans in boiling, salted water until al dente (3-5 minutes), drain and toss with a little splash of olive oil and salt. Heat the rice according to the packet instructions. You also have plenty of time to cook rice from raw at this point if you prefer.

Step 4

Serve the crispy, caramelised chicken with the green beans, the hot rice and all those lovely roasting juices drizzled over the top. Delicious!

  • 1kg Chicken Thighs, skin on, bone in 1x Sainsbury's British Fresh Chicken Skin on Thighs 1kg
  • 1 Lemon, juice and zest 1x Sainsbury's Lemons
  • 2.5 tbsp Runny Honey 1x Sainsbury's Runny Honey 340g
  • 2.5 tbsp Wholegrain Mustard 1x Sainsbury's Wholegrain Mustard 180g
  • 400g Fine Green Beans, topped and tailed 2x Sainsbury's Fine Green Beans 200g
  • 2 Brown Rice 2x Ben's Original Classic Wholegrain Microwave Rice 220g
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
