Hoisin Mackerel Pancakes

Need a speedy, DIY family meal? Try these mackerel pancakes. Using sweet ingredients with stronger-flavoured fish such as mackerel helps tempt children to try them.

Method

Based on 4 servings, adjust as needed.

Step 1

Marinate the mackerel in the hoisin sauce while you prepare the veg. Cut the spring onions and cucumber into thin matchsticks, and separate the lettuce leaves.

Step 2

Heat the oil in a large frying pan over a medium heat. Add the mackerel and fry for 3-4 mins until sticky and caramelised (you can also pop them under a hot grill). Heat the pancakes following the pack instructions. Serve everything in the middle of the table and let everyone help themselves.

  • 4 Spring Onions, cut into thin strips 1 x Sainsbury's Spring Onions Bunch 100g
  • 2 Little Gem Lettuces, leaves seperated 1 x Sainsbury's Little Gem Lettuce x2
  • 1 tsp Vegetable Oil 1 x Sainsbury's Olive Oil 1L
  • 10 Chinese Pancakes 1 x Gressingham Chinese Duck Pancakes x12 115g
  • 2 tbsp Hoisin Sauce, plus extra for dipping 1 x Blue Dragon Rich Hoisin Sauce 250ml
  • 4 Mackerel Fillets, all bones removed, cut into finger-length strips 2 x Sainsbury's British Mackerel Fillets x2 180g
