A quick, fresh mid-week meal that will transport you to the Mediterranean!
Based on 4 servings, adjust as needed.
Preheat the oven to 200°C/180°C Fan. Splash the the flatbreads with a little water and bake for 7-8 minutes, until hot.
In a small bowl, mix together the cherry tomatoes, lemon juice, olive oil, rose harissa paste (if using) and a pinch of salt.
Next, set a large frying pan over a medium heat. Add the sliced halloumi and cook for 1-2 mins on each side until golden. Remove the pan from the heat and add the honey, swirl the pan until the honey coats the halloumi.
To assemble, take a flatbread and top with a spoonful tzatziki, some marinated tomatoes, honey-coated halloumi and a handful of shredded lettuce.
