Packed with antioxidants and anti-inflammatories, this light and comforting soup will warm you from the inside out. We’ve opted for giant couscous here, but you could use any type of pasta you like. This is a great opportunity to use up those odds and ends of pasta packets, you could even add a couple of different types to add some variety.
Based on 4 servings, adjust as needed.
Set a large pot over a medium heat and pour in the olive oil. Once hot, add the sliced onion and celery and gently cook for 5 minutes until translucent.
Add in the chopped garlic, ginger, chilli flakes and turmeric and fry for a further minute.
Pour in the chicken stock, giant couscous and shredded chicken. Bring to a gentle simmer and cook for 10 minutes. Season with salt and a generous amount of black pepper.
Finish the soup by stirring in the chopped parsley and dill, lemon zest and juice. Ladle into bowls and enjoy.
