Golden Chicken Soup

Packed with antioxidants and anti-inflammatories, this light and comforting soup will warm you from the inside out. We’ve opted for giant couscous here, but you could use any type of pasta you like. This is a great opportunity to use up those odds and ends of pasta packets, you could even add a couple of different types to add some variety.

Method

Based on 4 servings, adjust as needed.

Step 1

Set a large pot over a medium heat and pour in the olive oil. Once hot, add the sliced onion and celery and gently cook for 5 minutes until translucent.

Step 2

Add in the chopped garlic, ginger, chilli flakes and turmeric and fry for a further minute.

Step 3

Pour in the chicken stock, giant couscous and shredded chicken. Bring to a gentle simmer and cook for 10 minutes. Season with salt and a generous amount of black pepper.

Step 4

Finish the soup by stirring in the chopped parsley and dill, lemon zest and juice. Ladle into bowls and enjoy.

  • 2 Garlic Cloves, chopped 1x Sainsbury's Garlic
  • 4 Chicken Thighs, skin removed and meat shredded 1x Sainsbury's Roast British Cooked Chicken Thighs 450g
  • 1 Thumb of Ginger, peeled and chopped or grated 1x Sainsbury's Root Ginger Loose
  • 1/2 tsp Turmeric 1x Sainsbury's Turmeric 48g
  • 150g Giant Couscous 1x Sainsbury's Giant Couscous 300g
  • 1L Chicken Stock, or fresh stock 1x Sainsbury's Stock Cubes, Chicken 10x10g
  • 1 Bunch Parsley, finely chopped 1x Sainsbury's Fresh Packed Flat Leaf Parsley 30g
  • 1 Lemon, zest and juice 1x Sainsbury's Lemons
  • 1 Bunch Dill, roughly chopped 1x Sainsbury's Bunched Dill 20g
  • 4 Celery Sticks, finely sliced 1x Sainsbury's Celery
  • 1/2 tsp Chilli Flakes 1x Sainsbury's Crushed Chillies 32g
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
