Winner winner chicken dinner - kids will LOVE this all-american classic dish.
Based on 4 servings, adjust as needed.
Warm a splash of olive oil in a large saucepan over a medium-low heat and sweat the red onion and green chilli until softened but not browned, about 5 minutes. Remove from heat and set aside.
Preheat oven to 200C Fan and cook the southern fried chicken according to pack instructions.
While the chicken is cooking, return to the red onion and chilli pan and add the sweetcorn, chicken stock cube, half the feta and 175ml boiling water (if cooking for 4 people). Cook everything together over a medium-high heat until most of the water has evaporated, 10-15 minutes. Stir in the lime juice and half the coriander, and remove from the heat. Season to taste.
Serve your fried chicken alongside the braised corn, topped with the remaining feta and coriander. Enjoy!
