This colourful bowl of goodness is exactly what we feel like on a weekday. The blend of bulgur wheat, red quinoa, pearl barley, wheatberries and green lentils in the grain packets provide a huge amount of fibre and protein, teamed with the hummus, this dish is a great high-protein vegan option. Whether it's for dinner or lunch the next day, this Falafel Grain Bowl will be sure to brighten up your day!
Based on 4 servings, adjust as needed.
Preheat the oven to cook the falafel. Bake according to the packet instructions, turning half way through.
Slice the red onion as finely as possible and place in a bowl. Squeeze over the juice of half the lemon, add a pinch of salt and a pinch of sugar. Mix to combine and leave to pickle for 5 minutes whilst you prep your other veg.
Dice the cucumber and quarter the tomatoes. Mix in a bowl along with a drizzle of olive oil and season with salt and pepper.
Cut the avocado in half, remove each half from their skins with a spoon and thinly slice. Heat the grains as directed on their packet.
Assemble the grains, cucumber and tomato salad, avocado slices and warm falafel in a bowl with a dollop of hummus and a few pickled onions. Top with a drizzle of olive oil and a squeeze more lemon if you like.
