Falafel Grain Bowl

This colourful bowl of goodness is exactly what we feel like on a weekday. The blend of bulgur wheat, red quinoa, pearl barley, wheatberries and green lentils in the grain packets provide a huge amount of fibre and protein, teamed with the hummus, this dish is a great high-protein vegan option. Whether it's for dinner or lunch the next day, this Falafel Grain Bowl will be sure to brighten up your day!

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the oven to cook the falafel. Bake according to the packet instructions, turning half way through.

Step 2

Slice the red onion as finely as possible and place in a bowl. Squeeze over the juice of half the lemon, add a pinch of salt and a pinch of sugar. Mix to combine and leave to pickle for 5 minutes whilst you prep your other veg.

Step 3

Dice the cucumber and quarter the tomatoes. Mix in a bowl along with a drizzle of olive oil and season with salt and pepper.

Step 4

Cut the avocado in half, remove each half from their skins with a spoon and thinly slice. Heat the grains as directed on their packet.

Step 5

Assemble the grains, cucumber and tomato salad, avocado slices and warm falafel in a bowl with a dollop of hummus and a few pickled onions. Top with a drizzle of olive oil and a squeeze more lemon if you like.

  • 500g Mixed Grains 2x Merchant Gourmet Aromatic Persian Style Quinoa & Green Lentils 250g
  • 1 Red Onion, finely sliced 1x Sainsbury's Red Onions Loose
  • 1 Lemon 1x Sainsbury's Lemons
  • 330g Cherry Tomatoes, quartered 1x Sainsbury's Cherry Tomatoes 300g
  • 1 Cucumber, diced 1x Sainsbury's Whole Cucumber
  • 200g Hummus 1x Stamford Street Co. Houmous 200g
  • 1 Avocado, sliced 1x By Sainsbury’s Medium Ripe & Ready Avocado
  • 0.5 tsp Sugar 1x Sainsbury's White Caster Sugar 1kg
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
