Duck and Pancakes

Crispy Peking Duck; it’s easy to put together and fun to eat, a real crowd pleaser. We’ve added crunchy lettuce to this takeaway classic, but you could also try finely sliced radish or shredded cabbage.

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the oven to 200°C/180°C fan. Sit the duck on a large baking tray and cook according to packet instructions.

Step 2

Whilst the duck is cooking, prepare the cucumber, spring onions and lettuce and add to a serving dish or platter. Pour the hoisin sauce into a small bowl.

Step 3

Once the duck is cooked, remove from the oven and set aside to rest. Meanwhile, gently heat the pancakes in a bamboo steamer or microwave.

Step 4

Shred the duck and place in a serving dish or bowl. Bring all the ingredients to the table for everyone to help themselves to and enjoy!
