Chicory, Pear, and Blue Cheese Salad

A classic in everyway. The bitter chicory in the dish compliments the pear brilliantly while the pear cuts through the fatty and salty blue cheese. A true match made in heaven.

Method

Based on 4 servings, adjust as needed.

Step 1

Prepare the chicory by chopping off the woody end and gently removing the outer leaves one by one. Slice the core as you go so the leaves come away easily. These small rounds can also be put into the salad so nothing is wasted. Place everything into a large salad bowl. Slice and core the pears and add the the bowl. Mix well and crumble in the blue cheese.

Step 2

Season the salad with salt and pepper and drizzle on the balsamic dressing. Serve as soon as the salad has been dressed. Don't forget to serve your salad with the torn or sliced baguette and salted butter if you opted for this.

  • 4 Heads Chicory, leaves separated 2 x Sainsbury's White Chicory 250g
  • Maldon Salt, to taste 1 x Maldon Sea Salt Flakes 250g
  • 2 Pears, cut into 1/8's and core removed 2 x Sainsbury's Conference Pear Single
  • 150g Blue Cheese 1 x Castello Creamy Blue Cheese 150g
  • 1 Baguette, torn or sliced into 4 1 x Sainsbury's Crusty White Baguette 400g
  • 4 tbsp Sweet Balsamic Dressing 1 x Sainsbury's Sweet Balsamic Dressing, Be Good To Yourself 250ml
  • 50g Salted Butter, soften 1 x Sainsbury's British Butter, Salted 250g
