Bang Bang Chicken Salad

Traditionally a Chinese street food dish, bang bang chicken gets its name from the ‘bang-bang’ action used to tenderise and shred the chicken!

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the grill to high. Place the chicken breast fillets on a baking tray, drizzle with vegetable oil and season generously. Place under the grill for 15-18 minutes, turning halfway.

Step 2

To make the bang bang sauce whisk together the peanut butter, sweet chilli sauce, lime juice, Chinese 5 spice and 6 tbsp boiling water. Season to taste with salt (or soy sauce).

Step 3

Next, shred the little gem lettuce, chop the cucumber, peel the carrots into ribbons and add to a large salad bowl or platter.

Step 4

Remove the chicken from the oven and rest for 5 minutes (this allows the meat to relax). Finely slice or shred with a fork and toss through the salad.

Step 5

Serve the chicken salad, bang bang dressing and lime wedges on the table for everyone to help themselves to.

  • 1 Cucumber, diced 1x Sainsbury's Whole Cucumber
  • 1 tsp Chinese 5 Spice 1x Sainsbury's Chinese 5 Spice
  • 400g Little Gem Lettuce 1x Sainsbury's Little Gem Lettuce x2
  • 4 Carrot, ribboned 4x Sainsbury’s Carrots Loose
  • 4.5 tbsp Peanut Butter 1x Sainsbury's Peanut Butter Smooth 340g
  • 2 Lime, half juiced and half cut into wedges 2x Sainsbury's Limes
  • 640g Chicken Breast Fillets 1x Sainsbury's British Fresh Chicken Breast Fillets Skinless & Boneless 640g
  • 2.5 tbsp Sweet Chilli Sauce 1x Sainsbury's Sweet Chilli Sauce 280g
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
