Method

Based on 60 servings, adjust as needed.

Step 1

Preheat the oven to 180°C fan. Line a large baking tray with parchment paper.

Step 2

Tip the cooked quinoa into the tray and toast in the hot oven for 15 minutes until just golden and dried out. Remove the tray from the oven and allow the quinoa to cool.

Step 3

Place the whole mixed nuts and the mixed sunflower, pumpkin and sesame seeds into a large sandwich bag and seal it up. Use a rolling pin (or anything heavy) to give the nuts a seeds a light bashing. You don't want fine crumbs. The nuts should retain the texture and a little shape.

Step 4

Tip the bashed nuts and seeds into the tray with the cooled quinoa before adding the milled seeds, golden linseeds, chia seeds, GF oats, cinnamon, rosemary, olive oil, honey and chopped hazelnuts. Don't add the goji berries just yet as these burn a little and need less toasting.

Step 5

Place the tray into the oven to bake for 10 minutes; string a few times as it cooks to prevent the edges from burning.

Step 6

Remove the tray from the oven (again!), fold in the goji berries and pop back in for a further 5 minutes.

Step 7

Once cooked, remove from the oven and allow to cool completely. Break the mixture up well and store in an airtight container. We recommend 1-2 tbsp on top of yoghurt, dips, over salads, eggs, fish or on avo on toast or sprinkled onto roasted veggies to boost fibre and help pack in those plants.
