Rich Tomato Baked Beans with Creamy Cottage Cheese and Tangy Pickles

Cooling, creamy cottage cheese is the perfect cut-through for our saucy, Rich Tomato Baked Beans, topped with tangy pickles + chives for that bit of zing and freshness. It's the ideal combo of ingredients for a DELICIOUSLY SATISFYING, protein-rich, vegetarian breakfast. Also works well with our Smoky Chilli Baked Beans.

Method

Based on 2 servings, adjust as needed.

Step 1

Heat the baked beans in a pan over a medium heat.

Step 2

Toast the bread until crisp and golden - either in a toaster for a quick, light finish, or in a pan with a drizzle of olive oil, frying both sides until crisp and golden brown.

Step 3

Spoon the baked beans onto the toast. Top with a generous spoonful of cottage cheese, pickles, a sprinkle of fresh chives and some cracked black pepper.

  • 150g Cottage Cheese 1x Piatnica High Protein Cottage Cheese 200g
  • 2 large Gherkins, halved lengthways (or any pickles of choice) 1x Sainsbury's Sliced Gherkins in Vinegar 340g (180g*)
  • 1 jar Rich Tomato Baked Beans Or Smoky Chilli Baked Beans 1x Bold Bean Co Smoky Chilli Baked Beans 325g
