Microwave Penne with Sausage and Peppers

One of my favourite easy meals is sausage and peppers, a simple, crowd-pleasing staple of Italian-American communities across the states, but particularly associated with Philadelphia. Add some pasta to this and you’ve got yourself a complete, delicious meal that cooks in the microwave in no time and in one dish.

Method

Based on 3 servings, adjust as needed.

Step 1

Combine the dried penne, oil, garlic, chilli flakes, oregano, and tomatoes with 250 mls water (if cooking for 2) in a large bowl and stir to mix. Add the drained olives, peppers and sausages on top.

Step 2

Cover and cook for 24 minutes, stirring every 8 minutes on full power (800w). Stir in the basil at the end of cooking, taste and adjust the seasoning with salt as you like (for me it usually doesn’t need any). Garnish with grated Parmesan, if you like.

  • 1 tbsp Olive Oil 1x Sainsbury's Olive Oil 500ml
  • 400g Tinned Tomatoes, any kind 1x Sainsbury's Chopped Tomatoes Can 400g
  • 1 tsp Dried Oregano 1x Sainsbury's Oregano 12g
  • 10g Basil, torn or chopped 1x Sainsbury's Fresh Packed Basil 30g
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
  • 30g Grated Parmesan, to garnish 1x Stamford Street Co. Italian Hard Cheese 200g
  • 60g Pitted Green Olives 1x Sainsbury's Pitted Green Olives 340g (150g*)
  • 200g Penne, dried 1x Sainsbury's Penne Rigate Pasta 500g
  • 4 Garlic Cloves, thinly sliced 1x Sainsbury's Garlic
  • 1 tsp Chilli (Hot Pepper) Flakes 1x Sainsbury's Crushed Chillies 32g
  • 2 Red Bell Peppers, de-seeded and roughly chopped 2x Sainsbury's Red Pepper
  • 4 Sausages, fresh Italian fennel sausages are best, but any will do 1x Sainsbury's British Pork Sausages, Taste the Difference x6 400g
