Place the buttermilk in a bowl, add the chicken pieces and stir to coat, then set aside to soak for 10 minutes. Preheat the oven to cook the chips if you don't have a large enough air fryer.
Mix together the bread crumbs, garlic powder, onion powder, dried thyme, dried oregano, salt and lots of black pepper in a bowl until well combined. Dip each piece of marinated chicken in the crumb mixture until fully coated, then place on a plate. Cook the chips according to the packet instructions. Preheat the air fryer.
Cook the chicken nuggets in a single layer in a preheated air fryer at 190°C (375°F) for 10 minutes, turning halfway through, until crispy and cooked through. You may need to do this in 2 batches. Serve with chips and coleslaw.
