Mushroom Stroganoff with Cauliflower Rice

An extremely low calorie dish, this can be ‘padded out’ with chicken breast strips or additional sides. A light meal but a real family favourite.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oil in a frying pan then add the onion and celery and cook lightly for 3 minutes until soft but not browned, then add the garlic and cook for a further 2 minutes. Stir in the mushrooms and paprika and cook gently for 5 minutes. If you’re using chicken strips add along with the mushrooms and paprika.

Step 2

Pour in the stock and simmer for around 10 minutes.

Step 3

Whilst this is simmering, grate the cauliflower and steam in a steam bag in the microwave for 2 minutes, or in the steamer. You can also buy a ‘ready to steam’ bag for ease. The dish is also delicious served with wild rice or brown rice.

Step 4

Steam your side dishes – I like steamed broccoli florets and mange tout with this dish.

Step 5

Finally stir in the crème fraiche and season with black pepper. Cook for a few more minutes, then serve with the sides and a sprinkle of parsley.

  • 1 pack Mange tout, steamed 1x Sainsbury's Trimmed Mange Tout 200g
  • 1 Onion, chopped 1x Sainsbury's Onions Loose
  • 1 tbsp Olive oil 1x Sainsbury's Olive Oil, Extra Virgin 500ml
  • 2 Garlic cloves, crushed 1x Sainsbury's Garlic
  • 4 Celery sticks, halved and thinly sliced 1x Sainsbury's Celery
  • 500g Mushrooms, chopped 1x Sainsbury's Closed Cup White Mushrooms 500g
  • 250ml Low-salt vegetable stock 1x Kallo Very Low Salt Vegetable Stock Cubes 6x10g
  • 300g Cauliflower rice 1x Sainsbury's Cauliflower Rice, Inspired to Cook 300g
  • sprinkle of Parsley, chopped, to serve 1x Sainsbury's Fresh Packed Flat Leaf Parsley 30g
  • 150ml Reduced fat Crème Fraiche 1x Sainsbury's British Lighter Crème Fraîche 300ml
  • 1 tsp Paprika 1x Sainsbury's Paprika 44g
  • 1 Broccoli, steamed 1x Sainsbury's Broccoli Loose
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
