An extremely low calorie dish, this can be ‘padded out’ with chicken breast strips or additional sides. A light meal but a real family favourite.
Based on 4 servings, adjust as needed.
Heat the oil in a frying pan then add the onion and celery and cook lightly for 3 minutes until soft but not browned, then add the garlic and cook for a further 2 minutes. Stir in the mushrooms and paprika and cook gently for 5 minutes. If you’re using chicken strips add along with the mushrooms and paprika.
Pour in the stock and simmer for around 10 minutes.
Whilst this is simmering, grate the cauliflower and steam in a steam bag in the microwave for 2 minutes, or in the steamer. You can also buy a ‘ready to steam’ bag for ease. The dish is also delicious served with wild rice or brown rice.
Steam your side dishes – I like steamed broccoli florets and mange tout with this dish.
Finally stir in the crème fraiche and season with black pepper. Cook for a few more minutes, then serve with the sides and a sprinkle of parsley.
