Watermelon, Sumac and Feta Salad

This Watermelon, Sumac and Feta Salad is summer in a bowl - bright, juicy, and bursting with bold flavour. Sweet watermelon meets salty feta, zesty sumac, and a hint of fresh herbs for a salad that’s light and vibrant. The perfect side for BBQs, picnics, or any time you need a cool, refreshing bite with a Middle Eastern twist!

Method

Based on 4 servings, adjust as needed.

Step 1

Put the sliced shallot in a small bowl of ice water and set aside. Whisk together the sumac, olive oil, lime juice and some seasoning.

Step 2

Chop half the mint. Drain the shallots well and put in a large bowl with the watermelon, most of the feta and the chopped mint. Mix the olive oil, lime juice and sumac before mixing with the salad. Coat well, taking care not to break up the feta.

Step 3

Transfer to a serving platter and scatter over the remaining feta and mint. Sprinkle with a pinch more sumac and serve with the toasted sourdough.

  • 200g Feta 1x Sainsbury's Greek Feta Cheese 200g
  • 20g Mint 1x Sainsbury's Fresh Packed Mint 30g
  • 700g Watermelon, cut into chunky cubes 1x Sainsbury's Baby Watermelon
  • 1 Lime, juiced 1x Sainsbury's Limes
  • 1tbsp Olive Oil 1x Sainsbury's Olive Oil 500ml
  • 4 Slices Sourdough Bread, to serve 1x Jason's Sourdough The Great White Bread 450g
  • 2tsp Sumac, plus a pinch to serve 1x Sainsbury's Sumac 45g
  • 1 Shallot, thinly sliced into rings 1x Sainsbury's Echalion Shallots 400g
