Gut health is one of the best ways to help support your all-around Wellbeing. There are so many studies connecting a diverse gut microbiome with strong immunity - and even our mental health. Spicy and gorgeously green, this quick stir-fry has a real zing and kimchi is an amazing source of probiotics to give your gut the love it deserves. Cashews add crunch and also contain antioxidants.
Based on 2 servings, adjust as needed.
Heat the Oil: Warm the vegetable oil in a wok over high heat.
Stir-Fry Vegetables: Add garlic, onion, carrot, celery, shiitake mushrooms, and mangetout or green beans. Stir-fry for a couple of minutes, mixing well.
Season: Sprinkle in sea salt and pepper.
Add Noodles and Sauce: Incorporate the noodles and stir-fry sauce ingredients (light soy sauce, dark soy sauce and toasted sesame oil). Toss everything together over high heat for 3 minutes until nicely coated.
Serve: Pile the noodles high on a large serving plate and serve immediately with the kimchi.
