Simple Healing Broth with Super Noodles

This is my ultimate go-to comfort soup that I make whenever I've been ill or am just feeling a bit low and out of sorts. It instantly makes me feel better - and is so simple to make. Miso is full of probiotics to give your gut health a helping hand if you've been experiencing nausea or digestive issues, and if you've been sweating out a fever, the saltiness will help replace those lost electrolytes. If you fancy something very simple and healing, leave out the noodles, tofu and spinach; the simple light broth will help soothe your stressed-out system.

Method

Based on 2 servings, adjust as needed.

Step 1

Prepare Miso: Dissolve the miso paste in a small amount of hot water and set aside.

Step 2

Sauté Aromatics: In a pan over medium heat, sauté the chopped garlic in sesame oil for about 2 minutes until softened.

Step 3

Add Vegetables: Incorporate the mushrooms, carrots, pak choi, spring onions,miso and soy sauce into the pan. Cook for approximately 5 minutes until the vegetables are tender.

Step 4

Combine Broth: Pour in 1L water (if cooking for 2) and bring the mixture to a boil.

Step 5

Optional Additions: If using noodles, add them now and cook for 2 minutes. Add spinach and tofu at this stage if desired.

  • 1 tsp Sesame Oil, or alternative oil 1x KTC Pressed Toasted Pure Sesame Oil 250ml
  • 2 Heads Pak Choi, chopped 1x Sainsbury's Pak Choi 250g
  • 1 tbsp Miso Paste 1x Sainsbury's Miso Paste, Inspired to Cook 100g
  • 2 Packs Dried Super Noodles, optional 2x Sainsbury's Vegetable Flavour Instant Noodles 90g
  • 2 tbsp Soy Sauce Or Tamari 1x Sainsbury's Light Soy Sauce 150ml
  • 100g Mushrooms, e.g., shiitake, washed and sliced 1x Sainsbury's Chestnut Closed Cup Vitamin D Mushrooms 300g
  • 50g Tofu, cubed, optional 1x Sainsbury's SO Organic Super Firm Tofu 300g
  • 1 Garlic Clove, chopped 1x Sainsbury's Large Garlic
  • 3 Carrots, washed, peeled, and sliced 1x Sainsbury’s Carrots Loose
  • 2 Spring Onions, chopped 1x Sainsbury's Spring Onions Bunch 100g
  • 50g Spinach, washed and sliced, optional 1x Sainsbury's Baby Leaf Spinach 100g
