This is my ultimate go-to comfort soup that I make whenever I've been ill or am just feeling a bit low and out of sorts. It instantly makes me feel better - and is so simple to make. Miso is full of probiotics to give your gut health a helping hand if you've been experiencing nausea or digestive issues, and if you've been sweating out a fever, the saltiness will help replace those lost electrolytes. If you fancy something very simple and healing, leave out the noodles, tofu and spinach; the simple light broth will help soothe your stressed-out system.
Based on 2 servings, adjust as needed.
Prepare Miso: Dissolve the miso paste in a small amount of hot water and set aside.
Sauté Aromatics: In a pan over medium heat, sauté the chopped garlic in sesame oil for about 2 minutes until softened.
Add Vegetables: Incorporate the mushrooms, carrots, pak choi, spring onions,miso and soy sauce into the pan. Cook for approximately 5 minutes until the vegetables are tender.
Combine Broth: Pour in 1L water (if cooking for 2) and bring the mixture to a boil.
Optional Additions: If using noodles, add them now and cook for 2 minutes. Add spinach and tofu at this stage if desired.
