When you can’t go to your favourite Portuguese chicken chain, make this burger at home! Juicy chicken in zesty peri-peri sauce, air-fried to perfection, topped with halloumi, lettuce and tomato and served in a soft bun. Quick and easy to make and so delicious.
Based on 2 servings, adjust as needed.
Preheat the air fryer to 200 ̊C (400 ̊F). Bash the chicken breasts until about 2cm thick. Do this by laying the chicken onto a piece of grease-proof paper, cover with a second sheet and bash gently with a rolling pin or meat mallet. Slice the halloumi cheese.
Put the peri-peri sauce into a bowl, then coat the halloumi in the sauce and set aside, then coat the flattened chicken breasts in the remaining sauce.
Spray the air fryer rack or basket with oil, then place the chicken in the air fryer, leaving room for the halloumi, and cook for 10 minutes.
Add the halloumi to the air fryer and cook both the chicken and halloumi for a further 5 minutes.
While they’re cooking, spread mayonnaise over both halves of the rolls. When the chicken and halloumi are ready, place them on the bottom half of each roll, add a slice of tomato and some lettuce and top with the other half of each roll.
Serve with your favourite sides alongside. We've matched this recipe with corn on the cob (which should be boiled in boiling salted water with a pinch of sugar and salt for 6-8 minutes) and spicy rice (cooked according to the packet instructions), but tender stem broccoli and/or peri-peri fries will also work well.
