Vegan Jackfruit Tacos with Mango Salsa

Jackfruit is a BRILLIANT healthy vegan substitute for pulled pork - hope you enjoy it!

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat your oven to 170°C/150°C Fan.

Step 2

Meanwhile, chop the mango, red pepper, red onion and coriander. Put in a bowl, together with 3/4 tsp salt, 1 tbsp olive oil, 1 tbsp lime juice, black beans and ground cumin. Season to taste and set aside - this is your mango black-bean salsa.

Step 3

Heat the mexican jackfruit according to pack instructions.

Step 4

At the same time, heat the taco shells in your preheated oven according to pack instructions.

Step 5

Serve everything at the table sharing-style; taco shells, mexican jackfruit, mango-black bean salsa, sour cream and guacamole. It's now a build-your-own taco party!

  • 1 Tin of Black Beans, 230g drained weight 1x Sainsbury's Black Beans in Water 400g (235g*)
  • 450g Mexican Jackfruit 3x Plant Pioneers Mexican Style Jackfruit 150g
  • 12 Taco Shells 1x Old El Paso Mexican Crunchy Taco Shells x12 156g
  • 0.5 tsp Ground Cumin 1x Sainsbury's Ground Cumin 43g
  • 1 Lime, juiced 1x Sainsbury's Limes
  • 1 Mango, chopped 1x Sainsbury's Mango Single
  • 1 tbsp Olive Oil 1x Sainsbury's Olive Oil 500ml
  • 0.5 Red Onion, chopped 1x Sainsbury's Red Onions Loose
  • 150ml Soured Cream 1x Sainsbury's Fresh Soured Cream 150ml
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
