Perfect for busy evenings, this fresh tortellini with brown butter sauce is ready in just 15 minutes!
Based on 4 servings, adjust as needed.
Melt the cubed butter in a large sauté pan set over medium heat. Once the butter has melted, cook for 1 minute, until golden brown. Reduce the heat to low, add the finely chopped garlic and cook for 30 seconds, until golden. Pour into a heatproof bowl and set aside.
Bring a large saucepan of salted water to the boil, add the tortellini and cook for 3 minutes.
Whilst the pasta is cooking, whisk together the olive oil, balsamic vinegar and a pinch of salt, then toss through the rocket.
Drain the pasta, reserving a cupful of the cooking water. Return the sauté pan to a low heat, add the browned butter and whisk in just enough cooking water so that you have a smooth, creamy sauce. Add the tortellini and toss together.
Serve with grated parmesan, plenty of black pepper and the dressed salad.
