Tortellini with Brown Butter Sauce

Perfect for busy evenings, this fresh tortellini with brown butter sauce is ready in just 15 minutes!

Method

Based on 4 servings, adjust as needed.

Step 1

Melt the cubed butter in a large sauté pan set over medium heat. Once the butter has melted, cook for 1 minute, until golden brown. Reduce the heat to low, add the finely chopped garlic and cook for 30 seconds, until golden. Pour into a heatproof bowl and set aside.

Step 2

Bring a large saucepan of salted water to the boil, add the tortellini and cook for 3 minutes.

Step 3

Whilst the pasta is cooking, whisk together the olive oil, balsamic vinegar and a pinch of salt, then toss through the rocket.

Step 4

Drain the pasta, reserving a cupful of the cooking water. Return the sauté pan to a low heat, add the browned butter and whisk in just enough cooking water so that you have a smooth, creamy sauce. Add the tortellini and toss together.

Step 5

Serve with grated parmesan, plenty of black pepper and the dressed salad.

  • 600g Tortellini 2x Sainsbury's Spinach & Ricotta Tortelloni 300g
  • 60g Rocket 1x Sainsbury's Wild Rocket 60g
  • 1 tbsp Balsamic Vinegar 1x Sainsbury's Balsamic Vinegar Of Modena 1 Leaf 250ml
  • 2 tbsp Olive Oil 1x Sainsbury's Olive Oil 1L
  • 80g Salted Butter 1x Sainsbury's British Butter, Salted 250g
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
