Tomato and Lime Salad With Crispy Ginger, Chilli and Garlic

This Tomato, Lime, Ginger & Garlic Salad is a flavor-packed celebration of bold, punchy ingredients that wake up your taste buds! Juicy tomatoes meet the fiery warmth of ginger, the sharp kick of garlic, and a citrusy splash of lime for a salad that’s anything but ordinary. It’s vibrant, refreshing, and the perfect sidekick to grilled meats, rice dishes, or just a sunny day lunch!

Method

Based on 4 servings, adjust as needed.

Step 1

Put the tomatoes in a large bowl and stir in half the shallots, the fish sauce, sugar, lime juice and a large pinch of salt. Set aside for 15 mins.

Step 2

Heat the oil in a small frying pan over a low heat and cook the rest of the shallots, the chilli, garlic and ginger for 3-4 mins, stirring continuously until crisp and golden. Remove from the pan using a slotted spoon and drain on kitchen paper. Sprinkle over a little salt.

Step 3

Tip the dressed tomatoes onto a serving plate. Scatter over the mint, crispy shallot and chilli mixture and the lime zest, then drizzle over the honey. Serve immediately.

  • 1 Red Chilli, thinly sliced 1x Sainsbury's Bird Eye Chillies (Red or Green) 20g
  • 3 Garlic Cloves, thinly sliced 1x Sainsbury's Garlic
  • 1.5tsp Honey 1x Sainsbury's Runny Honey 340g
  • 2 Shallots, thinly sliced (use a mandoline, if you have one) 1x Sainsbury's Echalion Shallots 400g
  • 4tbsp Fish Sauce, or vegetarian alternative 1x Blue Dragon Fish Sauce 150ml
  • 15g Mint, leaves picked 1x Sainsbury's Fresh Packed Mint 30g
  • 2 Limes, zested and juiced 2x Sainsbury's Limes
  • 1tsp Light Brown Soft Sugar 1x Sainsbury's Fairtrade Light Soft Brown Sugar 500g
  • 20g Ginger, peeled and sliced into matchsticks 1x Sainsbury's Ginger 100g
  • 700g Ripe Tomatoes, thinly sliced or halved or quartered if small 3x Sainsbury's Best of British Tomatoes, Taste the Difference 250g
