Tiramisu, or 'pick me up" as the Italian translation goes, is an all-time favourite dessert, and it’s so easy to prepare. Whip up this indulgent treat for a special someone. It's a rather grown-up dessert, especially if you opt to add the Madeira or Marsala to the Amaretti biscuits. This dessert should be served fridge cold, with two spoons 😉 ❤️. This recipe serves 6. You could make them in small glasses or one medium-sized Tiramisu.
Based on 6 servings, adjust as needed.
Combine the egg yolks with the vanilla paste, icing sugar, lemon zest and Madeira (if using) in a large stainless steel or Pyrex bowl. Place the bowl over a pan of simmering water and whisk using an electric hand-held whisk. Do this until the egg mixture has doubled in volume and is pale in colour. It will take about 5 minutes of whisking. Do not overheat the mixture or allow the bottom of the bowl to come in contact with the simmering water. Remove the bowl from the heat and allow to cool before adding the mascarpone and whisking again.
In a separate, clean, dry bowl, whisk the whites using an electric whisk (with clean beaters) until stiff peaks start to form. Fold into the egg and mascarpone mixture.
Soak the Amaretti biscuits in the coffee and lay two in the bottom of each serving glass. Spoon a generous amount of mascarpone cream on top of each one. Soak the remaining biscuits in the coffee and put them on top of the mascarpone cream. Evenly distribute the remaining mascarpone cream and smooth over the top. Dust with cocoa as you are about to serve.
You can make this in advance as it will keep for a few days in the fridge. Just dust/re-dust with cocoa before you serve.
