Sticky Marmalade Chicken with White Beans and Rosemary

Sticky, caramelised chicken thighs with a marmalade twist. The rendered chicken fat thickens and enriches the bean stew, which is seasoned with rosemary, parmesan, and a touch of lemon and served with crispy kale. This hearty dish is also great eaten on day 2 or 3.

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the oven to 190°C fan. Mix together the marmalade, half of the grated garlic, Dijon mustard, lemon juice, honey and a dash of oil, with a generous pinch of salt and pepper. Trim the chicken thighs of any excess fat and skin before mixing them in the marinade.

Step 2

Lay the coated thighs onto a baking tray, skin side up and place into the preheated oven to cook for 35 minutes, basting in the sauce halfway through cooking.

Step 3

While the thighs are in the oven, slice the onion and leek and heat a large saute pan. Add the remaining oil and once warm, add the onion and leek. Add a pinch of salt and cook until soft (about 12 minutes. Add the remaining grated garlic and the chopped rosemary. Cook for a further 2 minutes before adding the wine. Reduce by half then pour in the beans including ** a little of the bean stock**. Season with black pepper and salt (if needed). Bring to a simmer and turn down once thickened.

Step 4

Place the kale onto a flat baking dish. Drizzle with a little amount of oil. Season and toss well. Place the kale into the oven to crisp until while the chicken thighs rests. The kale will take about 8 minutes to go crispy.

Step 5

Mix the grated parmesan through the beans and some of the juices from the tray that the chicken was cooked in (you want the beans to be nice and saucy). Serve the beans with the chicken and the crispy kale.

  • 3tbsp Sevil Orange Marmalade 1x Duerr's Thick Cut Seville Orange Marmalade 340g
  • 50g Parmesan Cheese, grated 1x Sainsbury's Grana Padano Cheese 200g
  • 8 Chicken Thighs, skin on 1x Sainsbury's British Fresh Chicken Skin on Thighs 1kg
  • 1tbsp Dijon Mustard 1x Sainsbury's Dijon Mustard 185g
  • 1tbsp Chopped Rosemary 1x Sainsbury's Fresh Packed Rosemary 20g
  • 1 Lemon, juice 1x Sainsbury's Lemons
  • 2 tbsp Honey 1x Sainsbury's Runny Honey 340g
  • 2 Jars White Beans, or 2 tins haricot beans 2x Bold Bean Co Organic White Beans 570g
