The lead-up to Christmas can be a particularly stressful time, with so much to remember, especially for those of us who are hosting or cooking. Merry Christmas from all of us at Lollipop! Our aim is to make your Christmas day run as smoothly and effortlessly as possible so, first things first...nominate a washer-upper, get the oven on, and pop a bottle of something fizzy! Preheat the oven to 200C/180C fan. The longest part of this process will be cooking the Turkey Joint, so this needs to be popped into the oven (if cooking from frozen) 2 hours 45 minutes before you intend on eating. The Turkey can be cooked from frozen (2 hours 30 minutes) or if thoroughly defrosted, will take 1hr 15 minutes to cook, until the juices run clear and the internal temperature reaches over 80C.
Once the turkey has 30 minutes of cooking time left, pop the goose fat roast potatoes onto a tray and place into the oven to join the turkey. These take 60 minutes 200C/180C fan.
Remove the Turkey from the oven once the juices run clear and leave to rest, wrapped tightly in foil to keep warm, and most importantly, free up some much needed space in the oven. It will happily sit for up to an hour, resting in a warm place. The cauliflower cheese joins the roast potatoes 15 minutes into their cooking time at 200C/180C fan for 40-45 minutes.
The honey glazed carrots and the spiced red cabbage take 40 minutes at the slightly lower temperature of 180C/160C fan so if you have a second oven, do use it. If not, you can place the carrots onto the lowest shelf of your oven, covered with foil for the first 20 minutes, then remove the foil, give them a stir and cook for the remaining 20 minutes. The cabbage is cooked from frozen, please follow the manufacturers cooking instructions with regards to packaging.
Following closely behind are the honey glazed parsnips and pigs in blankets, these go in the oven at 200C/180C fan for 25-30 minutes.
You now have a few minutes to mix 40g gravy granules with 560ml boiling water. Keep warm in a small pan while you heat brussels with chestnuts and bacon through in a pan for 10 minutes (this can also be done at 800W for 6 minutes in the microwave. Place the Yorkshire puddings into the oven to heat through for 4-5 minutes at 200C/180C fan and don't forget to warm your plates up if you have space to do so.
Carve the rested turkey joint into 12-16 slices and lay onto plates. Serve up the crispy potatoes, carrots, parsnips, pigs in blankets, cauliflower cheese, spiced red cabbage, Yorkshire puddings and lashings of gravy. Don't forget a spoonful of cranberry sauce on the side and to change into your stretchy trousers!
When you can face round 2, the Christmas pudding is really easy. Heat according to the manufacturer's instructions. The easiest way to do this is usually in the microwave. We also recommend you heat the brandy sauce gently in a pan, stirring continuously until just warm. If you want to flambe 🔥 your christmas pudding, the easiest way to do this is to gently heat 100ml of brandy (or whisky if you have that instead) in a small saucepan. Place the now hot Christmas pudding onto a serving plate (dim the lights!) and light the brandy, whilst still in the pan, using a long match, lighter, or chefs blow torch. Once the brandy is flaming, carefully pour it over the pudding and wait for the oohs and ahhs.
